I have seen so many pancake recipes lately featuring oatmeal, so this past Sunday I thought I should give it a whirl. So glad I did, because well...they were delish.
The texture was perfect. I love how they had a bit more substance, without being too dense.
(Please excuse our coffee table yoga cat in the background. hehe)
What you need:
1/2 cup quick cooking oats
1 tsp baking powder
1/2 tsp salt
1/2 tsp baking soda
1/2 cup whole wheat flour
1/2 tsp cinnamon
1 1/2 tbls honey
1/2 tsp vanilla extract
3/4 cup almond milk
2 tbls veg. oil
1 cup of blueberries
1 egg
What you do:
1. Combine all dry ingredients in a bowl.
2. In another bowl, whisk egg and then add vanilla extract, milk, honey and veg. oil. Mix well.
3. Add mixture into dry ingredients. Whisk, then add blueberries.
4. On a preheated, medium heat skillet that is lightly oiled, pour pancake batter into whatever sized pancakes you would like.
(I ended up with 4 decent sized flap jacks.)
5.Slice desired fruit on top, pour a little maple syrup on and shove into mouth.
Enjoy :)
