Food Friday: Oatmeal Honey & Blueberry Pancakes



I have seen so many pancake recipes lately featuring oatmeal, so this past Sunday I thought I should give it a whirl. So glad I did, because well...they were delish.
The texture was perfect. I love how they had a bit more substance, without being too dense.


(Please excuse our coffee table yoga cat in the background. hehe)


What you need:
1/2 cup quick cooking oats
1 tsp baking powder
1/2 tsp salt
1/2 tsp baking soda
1/2 cup whole wheat flour
1/2 tsp cinnamon
1 1/2 tbls honey
1/2 tsp vanilla extract
3/4 cup almond milk
2 tbls veg. oil
1 cup of blueberries
1 egg



What you do: 
1. Combine all dry ingredients in a bowl.
2. In another bowl, whisk egg and then add vanilla extract, milk, honey and veg. oil. Mix well.
3. Add mixture into dry ingredients. Whisk, then add blueberries.
4. On a preheated, medium heat skillet that is lightly oiled, pour pancake batter into whatever sized pancakes you would like.
(I ended up with 4 decent sized flap jacks.)
5.Slice desired fruit on top, pour a little maple syrup on and shove into mouth.

Summer Evening on the Waterfront

Summer is dwindling down, so the hubs and I thought it would be fitting to have a little date day on Seattle's waterfront. We were originally thinking about making a trip down to Portland, but decided to stay local, which was a great life choice....because we enjoyed one feast of a dinner at The Crab Pot. If you love seafood and have never been....I highly recommend it. I can't think of anything better on a later summer evening than sitting outside next to the water, with seagulls cawing above, all while eating some delish food, caught right off the local waters.


Before dinner we spent some time in our favorite neighborhood, Capitol Hill, browsing thrift shops and listening to tunes in local record stores. Something about that neighborhood makes us feel so youthful and alive. After our rather larger dinner, we walked around on the pier, watched the ferries come and go and saw the sun slowly slip into the Puget Sound.
Perfect day with the most perfect dude :)

Keepin' It Simple

I can't really think of anything better to wear on a hot, sticky summer day, other than a tiny and light weight dress. My standard for dress length goes right out the window when the temperature rises above 80 degrees, plus the cuteness factor outweighs the debate of whether or not it is appropriate anyways.
I love the little polka dot color combo paired with the navy and the way too adorable scalloped edges around the bodice. Oh, and the back zipper...always a winner.

Do you ever go shoe shopping in your own closet? Well, this lady used to work in retail and every retail job I had consisted of a shoe store. So, I have lots...but only regularly wear the same few pairs, until I get bored and think I need a new pair of this or that in a particular color. This outfit needed bright red shoes, so out came the many boxes and a few minutes later I was sportin' a barely worn pair of cute red flats. Score.

This weekend I am having a girls weekend away with my closest cousins and aunts.
Shopping and drinks are on the agenda...oh boy! :)

Life Lately




Soooo, titling this post Life Lately is a bit of a stretch.
It is more like, "Life Lately-ish"...or "Life During the Past Month or So".
Neither had the same ring to it, so Lately it is.
I had been meaning to do one of these posts for awhile now, but you know...life...it happens and the blog doesn't always get the time devoted to it that you wish it could.



Anyways, hope you enjoy these little snapshots of whats been going on in my world :)

Left to Right-
1&2: On a beach of the Puget Sound while camping.

3&4: Creepy empty carousel late one night on Seattle's waterfront. Favorite ice cream ever. Mint Chocolate Chip. MMMM.

5&6: With friends on Seattle's new Ferris Wheel. So fun and sorta scary at first. 

7&8: Roasting marshmallows with the hubs and him playing guitar while camping.

9&10: Watching the Blue Angels show over Lake Washington. So cool!

11&12: Strawberries and jelly bean tomatoes that I grew in my patio garden!

13&14: Cute little random abandoned shack and the hubs and I taking a break while on a hike.

15&16: Starbucks iced coffee with sweetener and cream...sooo good. Obsessed with those drinks this 
summer! Delish Thai and fake Chicken naan pizza. Mmmm. Peanut sauce, red peppers, basil and mozzarella.

17&18: Pretty butterfly I spotted while on a walk and Yummy wild berries from that same walk.

Ladylike Summer

So, if this dress looks familiar, you got a sneak peek of it here. I love it too much not to let it have its time to shine in a proper outfit post. From the light pretty colors, ladylike length and cap sleeves, adorable little lacy/sheer cutouts on the shoulder and upper back....it is perfect in my book!



How was everyones weekend?! Well, I guess it's Tuesday now...but I have a 4 day weekend this time around...so I am still in weekend mode. We in the Seattle area have had some of the hottest weather all year! It got up in the high 90's, low 100's in some places. Considering people don't really have air conditioning around here, it can get kinda toasty and uncomfy. But, since this girl did live in South Texas for a few years, it wasn't too bad!

We spent Saturday meeting up with my parents in Olympia for lunch and fun times. Sunday the hubs and I went to Seafair and watched the Blue Angels fly above Lake Washington. Soooo cool! If you live in the area or are visiting during Seafair, you have to watch this impressive show! Yesterday and today we have been catching up on some chores, organizing one of our hellish closets and relaxing before I start my new job on Wednesday. Eeeeep! So excited!
