Into the Woods We Go...

So as you have probably noticed from some of my previous posts, I really enjoy nature and being outdoors.
This past Sunday my guy and I went on a small, but pretty hike called Twin Falls....which in fact...did have two waterfalls. A smaller one on top and a bigger one towards the bottom/start of the hike that spills into a freezing cold river.

Layering with Lace

I have quite a few dresses that are just a tad toooo short to wear without tights. So in the spring/summer months they are sort of pushed to the back and out of commission for those seasons, which is kind of unfortunate. 

Soooo, awhile ago I got the idea to find a pretty lace-trimmed slip and wear it under the aforementioned dresses, to add just a few extra inches so that I would feel comfy about wearing them sans tights in this warm summer weather.

It was surprisingly difficult to find a slip that was long enough and that actually had a thick lace trim at the bottom, but after a few months of searching...I came across this one at Ross, of all places.


This is the first dress I tried the lace slip layered underneath and I really like how it turned out :)





And as you can tell from this dress and this one, I am pretty much a huge sucker for a dress with a pretty back...

Hot Day on the Hill

Yesterday we went up to Capitol Hill in Seattle to find a dress for me, for my brother's wedding and then to hang out with a few friends that live in the neighborhood.

It was so unbelievably beautiful and hot, for Seattle standards at least. We had lunch at Dick's Drive-In; a cheap & classic Seattle burger joint and then found some AMAZING graffiti art on a random wall that we had to stop and take some photos of.

Let's go Camping!

Going back to work today was harder than usual. I had an amazing 4-day weekend, camping with my parents and the husband. Much needed time, indeed.

It had been about 5 years since my husband and I had been camping, which is pretty weird considering we both came from families that took regular camping trips each and every summer.
Camping just wasn't on our minds while living in Texas; the land of 100+ degree temps and constantly feeling like you are in a sauna. 

Soooo, our first camping trip being back in Washington was spent on the Hood Canal. Beautiful and oh-so-much fun...

Tasty Tofu Pad Thai

So a little fact about me, I love asian food. So much. Whenever the dude and I go out to eat, which isn't very often, we always end up going somewhere that serves delicious asian cuisine. Lately our go-to has been Thai. Pad Thai is a pretty standard Thai dish, but none the less amazingly good. I love it so much, that I sometimes even get the Vegan Pad Thai with Tofu from Trader Joes when I am craving it. It does the job and is actually pretty dang tasty.
So I have been thinking lately how much I need/want to make my own, so we can enjoy this dish whenever we please. I found a recipe online and tweaked it a bit, so easy and good.



  
What you need:
8 ounce Rice Noodles 

1/2 cup non-salted, dry roasted peanuts (chop if you would like)

1 cup of bean sprouts

Bunch of green onions, sliced into whatever length you like ( I bought a bunch and used half of them. We like green onions, but use however much you like)

Thai-style baked Tofu cut into small chunks (You can use regular or any baked, asian style)

2 tbls finely chopped garlic

1 tbls Raw Agave Nectar

1/4-1/2 tsp Red Pepper Flakes (Optional. I used a heaping 1/2tsp)

2 tbls Expeller-Pressed Peanut Oil

3 tbls Reduced-sodium soy sauce

1 tbls lemon jucice
Steps:
Mix agave nectar, soy sauce, lemon juice and red pepper flakes in small bowl.
Cook Rice Noodles according to package and in the meantime, heat oil in a large skilled over medium heat. Add garlic and cook for about 1 min. Add tofu and green onions, cook until green onions are tender.
Add noodles to skillet when done, along with bean sprouts and agave/soy/lemon/red pepper mixture. Toss together and spoon onto dish, then sprinkle with peanuts.

Then stuff mouth with deliciousness!



 Simple, quick and easy! Next time I make this, I would maybe make it a little sweeter with a tad more agave nectar and possibly add some tiny pieces of shredded carrots...either way...yum.

Hike to Rattlesnake Ridge

This past Sunday the man and I went on a hike!
Not our regular hike that consists of long miles, but flat, easy ground...in which you barely break a sweat.
But the kind of hike that is a constant incline, you sweat a lot and your legs feel like jello.
It was awesome and sooo worth it.

When we got to the top, which is called Rattlesnake Ridge, the vistas were so unbelievably beautiful and breathtaking. The elevation at the top is around 1200ft and you can see for miles.

We found a nice little section of the ledge free of all the numerous other hikers,
laid out our stuff and enjoyed the view for about an hour while eating blueberries and talking about how lucky we are to live in such a beautiful part of the Earth.

Blush Tones + Lace

This is what I wore today while running around town with my man.
We stopped by a park for a bit to hang out and snap a few photos.
Luckily, it wasn't tooooo warm today, so I was able to wear my blazer that I haven't had enough opportunities to wear thus far :)
